I have found a way to finish eating my courgettes quickly. I have only got two courgette plants but at the moment they are fruiting like crazy. I have decided to harvest them much earlier the shops call them baby courgettes. They taste divine much more taste the big ripen ones. One can also put whatever greens you have on hand like spinach or chard. I have added carrots to them as I have plenty on hand. Just saute the garlic about 3 cloves add the sliced, torn veggies. stir fry on hot oil for about 30 sec to 1 min. add a bit of fish sauce and your are done. I have served the stir fry in the pictures with different types of tomatoes harvested from the garden.
Baby courgette 4-5, thinly sliced including flowers
torn Swiss chard, rhubarb chard, spinach about a or two handful about 300grm
2 medium size carrots
1 teaspoon of oil for stir frying
3 cloves garlic
1 tablespoon fish sauce
